Broccoli Rice


Hey y'all! Happy Wednesday!

One of my goals this year is to eliminate food waste...and I'm getting real about it. So real that I am keeping fat brocolli stems and turning them into "rice" for stir fries, burrito bowls, or if I need something for my meat to sit on top of.

I've seen packaged brocolli rice chunks at the stores but I just can't come to terms for paying $5 for it when I know I can make it myself with the extra brocolli stems that always get chunked into the trash! You could do this with cauliflower stems too! Personally I think it makes for better "rice" chunks. Less mushy than the florets.



Let's do it!

Steps:
1. Trim you brocolli as you normall would and set the stems aside. Roast or steam your broc and lets chop up the stems! Watch the video on tribeokc Instagram for an easy how to, so you can end up with nice fine dices of broc!
2. Arrange the brocolli on a baking sheet over parchment paper. Do this step first so they can freeze not all clumped together...Freeze for a few hours or overnight and zip right in a freezer bag afterwards. Use as you please!
