Healthy Waffles

Any waffle fans in the house?
What about Waffle House fans? Ha!
If you raised your hand for either, your gonna love this healthy hacked recipe!!
Not only do these waffles come out with a amazing taste...but the texture is on POINT. Firm and a little crispy on the outside + soft but not fall apart on the inside. Dreamy.
So what makes these "healthy"? First, we are gonna skip processed white flour and use the underrated oat flour. Yeahhhh baby. Pure oats! I pulsed organic rolled oats in a food processor for about 30 seconds to make "oat flour". SO much cheaper than buying pre packaged oat flour. (You can do this with almost any nut...the $ savings are insane). Save your money and buy less plastic, shop from the bulk bins next time you hit the store!
Oats are one of the healthiest carbohydrate sources you can eat! Also one of the most versatile. You can pretty much create any flavor profile with oats. Granola sweet or savory, use in cookies, breads, baked goods, the obvious oat meal, etc.! Pinterest that ish and get oat-cited!
Another healthy ingredient in this recipe: the fat base - coconut oil. You can sub out for an alternative here as well - ghee or butter would work great. And, if you're not a fan of a hint of coconut flavor, then use a truly raw, unrefined coconut oil for zero coconut flavor.
The other heathy ingredients: a little honey, eggs, organic milk, vanilla extract, baking powder, 'n Himalayan pink salt.
Lastly, these are amazing to freeze and pop in the toaster for next time.
Let's get started!

Ingredients:
1 1/2 cup of organic rolled oats, into oat flour (see recipe below for the how to)
2 tsp baking powder
1 /2 tsp salt
1/2 tsp cinnamon
3/4 cup organic milk (I used whole, you can use whatever % you like. If dairy intolerant, use LF or nut milk)
1/4 (heaping) cup of coconut oil, melted (can also use butter or ghee)
2 large eggs
2 TBSP honey, raw and local if you can find it (or maple syrup)
1 tsp vanilla extract
Recipe:
1. First let's make the oats into oat flour. Simply pour 1 1/2 cups of rolled oats into a food processor or blender until the oats are super fine like flour.

2. Mix all of the dry ingredients together into a large bowl. (Oat flour, baking powder, salt, cinnamon)

3. Whisk (I blended in blender) together the wet ingredients well. (milk, melted coconut oil, eggs, honey, vanilla extract) Get all of the egg striations out!
4. Pour the wet into the dry and fold together with a wooden spoon until just mixed. 5. Let the batter sit for 10-12 minutes so the oats will soak up some moisture. Do not skip this step! Now is the time to pre heat your waffle iron or pan of you wanna turn these into pancakes :)

6. Once time has passed, fill in your waffle iron until batter covers. Don't over fill! Follow your iron's directions and let the waffle making commence!

7. Top with your favorite toppings. Mine are bananas, peanut butter, strawberries, and blueberries. Of course a touch more honey or maple syrup.
