Paleo Brownies
Hey y'all! I'm here with another dessert recipe...not mine however ;) Another one of my favorite bloggers made these last week, The Defined Dish. She's a Whole30 & Paleo conosouir and I love to follow her on social media. She posts recipes in her stories and they are ALWAYS delicious and easy. Go give her a follow! It's inspiring and might make you wanna get in the kitchen! If you are new to cooking, just watching can be so helpful. She does the step by step recipe stuff. It's awesome.
Anyways, these brownies, I made them the day after she posted them and had NO choice but to share and tell all the land!!! They are phenomenal and will be on the rotating dessert list just like the coconut cups from last week. I really am digging the healthy dessert life. Have you hopped on the train yet? Huh, huh?? If not, these are great of start with.
Ingredients: (today's forgotten ingredients in photo is nut butter *thumbs up*)
DRY 1/2 cup fine/blanched almond flour
1/3 cup unsweetened cocoa
1/3 cup coconut sugar
1/2 tsp baking soda
1/4 tsp Himalayan salt
1/4 tsp cayenne pepper
1 tsp cinnamon
WET
2 eggs
1/4 cup maple syrup1/2 tsp vanilla extract
28g/2T ghee, melted 1/4 cup nut butter (almond or cashew is best)
1/4 cup dairy free, sugar free, compliant choc chips (I use Lily's)
Recipe:
1. Preheat oven to 350 deg. Mix all of the dry ingredients together. Then sift through a fine mesh strainer into another bowl. Use the whisk to helpless the last bit through. You don't want any clumps. There will be coconut sugar at the end that won't go through and that's okay!
2. Whisk together the eggs, maple syrup, and vanilla in a large bowl. Then add the nut butter and melted ghee. Whisk fast and well.
3. Mix the dry ingredients into the wet, in fourths. Then gently stir in the chocolate chips. Taste batter and add more spices if needed.
4. Line a baking sheet with parchments paper and lay out the batter flat, any shape will do just as long as the surface is mostly flat and even. It should have about a 3/4 inch height. If you wanted crispy edges. Make the outside inch of the batter 1/2 the height.
5. Bake for 25-30 minutes or until center is cooked through. Check with toothpick. If it's clean when poked in the middle, they're ready!
6. Take out to cool. Make your chocolate drizzle. In a small bowl: 4 T dairy free/SF chocolate chips, 1 T coconut oil or butter, pinch of cinnamon. Melt in the microwave, driiiiiizle.
